The countdown is on! I can NOT believe that Christmas is next WEEK. That’s just plain crazy talk. And I’m crazy busy. . . as I’m sure you are too. . . doing my holiday baking. Last night, I made Peanut Butter Cups. I haven’t made them in awhile, but when I was thumbing through my “Tried and True” recipes, the ones I’ve had for forever and a day, I came across it and KNEW it was a goodie. It had my infamous Happy Face sticker on the card. That’s a sure sign that it’s a hit. Also, it’s a sure sign that they are EASY. . . cuz I’m all about some EASY. That Happy Face is smiling for lots of reasons.
My friend, Deb, from Seattle (Hey Deb!) was looking for some cookie recipes here. These are not technically cookies, but they could easily pass for yummy candy-like-cookies. (If this doesn’t work for you. . . keep coming back. I’ll look for some stand-out cookie recipes.)
This delicious goodness is SO easy that it literally takes less than 15 minutes to make. And they’re SURE to WOW a Reese’s lover. Here’s what you need:

PEANUT BUTTER CUPS
2 sticks butter, melted
1 cup smooth peanut butter
1 1/3 cup graham cracker crumbs
2 1/2 cup powdered sugar
1 (12 oz) pkg milk chocolate chips
Melt butter and add peanut butter; stir until smooth. Add graham cracker crumbs and powdered sugar; mix well. Pour into a 13 x 9 pan; press firmly. Melt chocolate chips in microwave; spread evenly across top of peanut butter mixture. Refrigerate for a few minutes to set.

EASY EASY EASY! And SO SO SO yummy!

NOTE: For my friend, Julz, in South Africa that asked me WHAT graham cracker crumbs were. . . I had to go to Wiki to get an answer. This is what I got:

I’m not sure where you are, but in the British Isles, digestive biscuits are a substitute for texture and flavour (but not exactly the same). If you aren’t set on the flavour, just use a crunchy cookie of whatever flavour you like. I just saw a recipe for using unfrosted cornflakes, butter, and sugar to make a graham cracker pie crust, but I’ve not tried that.

Now to ME, a “digestive biscuit” doesn’t even SOUND good. My mind immediately conjures up a dog biscuit. . . and those things have NO flavor. Hey, Mel Gibson ate one in Lethal Weapon! So I had to TASTE one. I seriously don’t get the big doggie whoop, cuz they don’t taste like ANYTHING.
I digress. In this case, I would think that Vanilla Wafers would work just as well. But then I don’t know if there are Vanilla Wafers in South Africa either. I think I need to take a trip over there to see what kind of ingredients would work here. PLUS, I could finally meet my good friend, the uber-talented, up-and-coming Rock Star!

I think I will have to try this – I LOVE peanut butter!! hmmm, will use tennis biscuits as a substitute and crush the hell out of them!

I think you should come out here, try a whole new culture as far as cooking is concerned and when I tell you that a margirita is about $3 – well, isn’t that motivation enough?? isn’t it? tee hee

OK, if you go jetting off to South Dang Africa before you get yourself over here to Seattle, I will go hunt you down. That’s all I’m sayin’.
As for digestive biscuits….what the hell? What do they do? All I can think of is they promote bile to stir up food in your belly, and that just doesn’t seem right to me.
I have made something similar in the past but I WILL make these tonight. I know they will freeze well. So last night I was with the Rah Rahs and Mo started bragging about winning your competition and I started complaining that you played favorites. You have made her even more difficult to live with. Next time you’ll have to give her a trophy. Have a happy and warm day.
