This was a serious hit at my house this past weekend. It’s just something I stumbled over on the Internet somewhere. I saw hashbrown, eggs, cheese, bacon and thought “How can you go wrong with that combo?” So I made it. Only I used ham because it’s what I had in the fridge. Well, I had bacon too, but the ham needed to be used up. I can see this being delicious with either. Here’s what I used:

HASHBROWN EGG BAKE

1 pkg (20 oz) shredded hashbrowns
1 cup chopped ham
1 cup cheddar cheese, shredded
1 tsp. salt
1/2 tsp. pepper
6 eggs
1 1/2 cups milk
dash of cayenne pepper

Preheat oven to 350 degrees.

Mix hashbrowns, ham, cheese and salt in large bowl. Spread into a lightly greased 9 x 13 baking dish.
Whisk together the eggs, milk and cayenne pepper. Pour over hashbrown mixture.
Bake for 40 – 45 minutes.

It’s THAT easy. . . and this is what you get. It’s really tasty. Next time, I’m going to try it with sausage! Wheee! I love sausage. And I plan on putting some grits right along side. Gosh, I’m salivating just thinking about it. I may have to have another brunch this weekend just because. . . it’s Sunday.
