How does that happen? Well, leave it to Serious Eats. They have it going ON combining Halloween, FOOD (my favorite topic), pumpkin carving and the Presidential Race. That’s quite a combination.

With Halloween a week away, I was looking around for some pumpkin carving ideas and/or patterns and look what I found. Check out the Pumpkin Burger! Talk about a new way to carve a pumpkin. How fun is THAT? I love how the sesame seed bun is pumpkin seeds. Very clever!

I actually think these resemble our candidates better. heehee Seriously, this is a great site here if you want the How To’s on pumpkin carving and some pretty great pattern ideas as well as Halloween ideas in general. They’ve got everything from Halloween stories, to crafts, to costumes, masks, decoration ideas and yes. . . even recipes!! Woohoo! They had a recipe for something called Backbones. But it’s really something I eat pretty regularly . . . since I’m only cooking for one most days. I call them Ham and Cheese Pinwheels, but for Halloween’s sake, they’re Backbones. Here’s what you need:

HAM AND CHEESE PINWHEELS, aka Backbones

2 Tbl cream cheese
2 Tbl mayonaise
1/2 cup shredded cheddar cheese
1/2 tsp Emeril’s Essence
2 drops of hot sauce (optional)
4 slices deli ham
2 flour tortillas

In a small bowl, mix the cream cheese, mayonaise, cheddar cheese, Essence seasoning and hot sauce until smooth consistency.
Divide this mixture in half and spread on each tortilla to within 1/2 inch of the edges of the tortillas. Lay 2 slices of ham over the filling on each tortilla.
Roll each tortilla into a cylinder shape as tightly as you can. Now, cut each cylinder into 1/2 inch slices, or “pinwheels”, or even “backbones”.

They also make for a quick bite to eat before rushing out the door to go Trick-or-Treating. Cuz if your kids are anything like my boys were, they’re ready to rock and roll the second it’s time. If it were up to them, they’d eat Snicker bars for dinner. But who wants a Snicker bar when you could eat a backbone. Eat these with a can of Tomato soup and you’ve got Blood and Backbones. Who could resist?
