With Christmas fast approaching, my oldest child was talking about ideas for Christmas gifts for everyone on his list, what with his budget so strapped and the economy in the toilet. He was going down his list and when he got to me, he said, “Oh, YOU are ALWAYS easy!! Anything for the kitchen.” Bingo!! My boy DOES know his mother. He could get me a pot holder and I’d be thrilled. Even better. . . if he MADE me a pot holder. I’m really that easy. My son knows what a freak I am about ALL kitchen stuff; appliances big and small, gadgets, cookware, silverware, etc, etc. The list goes on! So you can just imagine how excited I was to receive this from Progresso.

And because this is the holiday season and the holidays are all about sharing, I have a surprise. Chocolate Plum Pudding Cake
INGREDIENTS (Nutrition)
2/3 cup raisins
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/3 cup unsweetened cocoa powder
2 teaspoons baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
3/4 cup butter, softened
1 1/2 cups white sugar
3 eggs
2 cups applesauce
1/2 cup coarsely chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Place raisins in a small saucepan, and cover with boiling water. Soak for 5 minutes, then drain. Grease and flour a 9 inch tube pan.
Sift together the all-purpose flour, whole wheat flour, cocoa, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Blend in the eggs, then the applesauce. Beat in the flour mixture. Stir in raisins and walnuts. Spread batter evenly into prepared tube pan.
Bake in preheated oven for 80 minutes, or until a toothpick inserted in the center of cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely; chill.

I actually love going to my mom’shouse at Christmas and seeing all the different fudge she would make! Nothing is like Christmas when you have mom’s fudge!

4 cups flour
3/4 tsp salt
1 cup butter
3 Tbsp sugar
2 pkgs dry yeast
1/4 cup lukewarm water
1 cup milk
3 eggs, beaten
1 tsp cardamom
1 egg white
Sugar
Cinnamon
Cut butter into the flour, salt and sugar as for pie crust. Dissolve the yearst in 1/4 cup lukewarm water. Scald milk, cook slightly and add to the beaten eggs. Stir until well blended. Add dissolved years, cardomom, and flour and butter mixture. Mix until smooth. Cover and let rise in a warm place until doubled in bulk. Place on a floured board, pat with the hands as though beating dough. Divide dough in half and place on 2 well-greased baking sheets. Spread douh thinly. Spread through the middle with the filling (below). Bring up edges to the center and press together to seal. Sprinkle with sugar and cinnamon and almonds. Bake 30 minutes in a 350 degree oven, or until lightly browned.
FILLING:
2 Tbsp soft butter
1/4 cup sugar
1 egg yolk
1 1/2 Tbsp rum (yummy!)
1/2 cup ground almonds (I use almond paste)
Work butter to a cream. Add sugar slowly and beat until fluffy. Add egg yolk and beat well. Blend in the rum and fold in the almonds.

If I had to pick a favorite thing to eat during the holidays: hmmmm, well – one the things I go for first would be The Apple Cranberry Casserole thing. (It is on my recipe page). Another thing I consider a must have is Mom’s homemade cheese ball.
