Seriously. . . if I had the energy. . . I have a LOT that I would like to blog about, but I’m EXHAUSTED! My immediate boss and the lady that works for me that supervises roughly 40 people were both on vacation Monday and Tuesday. My normal Monday is already a fun-packed joy, but add all the extras and . . . let’s just say. . . I’ve been hoofin’ it. And in dire need of The Happiness Kit.

SO by Thursday, my body thinks it’s Friday and I’m seriously falling asleep while I eat my dinner. If my dinner hadn’t been SO fabulous, I may have laid my head in my noodles. So it gave me that extra burst of energy to let you know about a seriously quick, extremely fattening, but totally easy recipe that you can throw together after “one of those days at the office”. It’s my Fettucini Alfredo. I got this from an Italian couple that were my neighbors about 20 years ago and I’ve been loyal to it ever since.

This recipe is SO easy and so rich and tasty. Here is all you need.

CREAMY FETTUCINI ALFREDO

1 – 8oz cream cheese
3/4 cup parmesean cheese
1/2 cup butter (1 stick)
1/2 cup milk (or half-in-half if that’s what you have)
8 oz. fettucini noodles, cooked and drained (or thin spagetti noodles if that’s what you have)

In large saucepan, combine cream cheese, parmesean cheese, butter and milk; stir over low heat until smooth. Add fettucini noodles; toss lightly.

That’s IT! I don’t have a picture of the final result. My stomach overtook my urge to photograph a plate of pasta. Just trust me. . . it’s delicious. I made a little garden salad to go with and some garlic bread and it tasted like I was in an Italian restaurant. And it serously takes less than 30 minutes. Not like Rachel Ray’s 30 minute meals that take 2 hours and a team of five people. THIS is easy enough to do even on your roughest weekday evening.
