And I’m not talking about ME this time. How about that? Crabbypants is working her way through her crap. No, I’m talking about FOOD. Yay food! I love food!

Last night, I got a message from my sister where she was rambling about how she got Mother’s Day confused. She thought it was this past Sunday when it’s really this coming Sunday. “Holy Batshit Batman!” How did Mother’s Day get here so fast? I didn’t even call her back. I ran straight for my recipe box and my cookbooks. I didn’t pass Go and I didn’t collect $200. Straight to my recipe box for ideas!

Every year, I make a big Brunch for Mother’s Day. It’s actually Lunch for my mom, but for me, it’s Brunch. So I make Brunchie-like food. And I never repeat a recipe for this Brunch. I always make at least one tried and true, never-fail recipe, and then several new, let’s-see-how-this-turns-out recipes. Sorta like an adventure. I’m really glad I’ve got an adventurous mom. She ain’t scurrred.

The first thing that came to me as an idea was my standard, go-to appetizer recipe that I got from a neighbor twenty years ago. . . Crabbies. Kathy is her name and she had served these at a get-together (probably a Tupperware party) at her house and when I popped one of these bad boys into my mouth, it was love at first bite. I think I consumed 75% of these things while I never left that tray.

They are so goooooood! And they’re really easy. Honestly, they take less than 30 minutes from start to finish to cleanup. I like to keep these ingredients on-hand just in case someone stops by or I get invited to something where I need to take a quick appetizer. You’ll be sure to impress. Here’s what you need:

CRABBIES

6 English Muffins
1 can Crabmeat, drained
1 stick butter, softened
1 (5 oz) jar Old English cheese spread
1 1/2 Tbl. mayonaise
1/2 tsp. Seasoned Salt
1/4 tsp. Garlic Powder

Preheat broiler in oven.

Drain the crabmeat and stir in remaining ingredients. Mix well.

Halve each English Muffin and spread mixture over top of each half. Place on large cookie sheet and broil for 8 – 10 minutes, or until golden. Cut into quarters and serve warm.

I started cutting them into quarters when I realized that I hadn’t taken a picture yet.

NOTE: These can be made ahead of time. When prepared, but before broiling, cover cookie sheet with plastic wrap and refrigerate. Just pop in broiler for 10 minutes when ready. They’re best served warm.

I didn’t get a picture of the tray of them before they were consumed. This is just MY plate. Yeah, I was greedy. And plump when I was finished.

They are so good and so quick and easy that I might just add them to my Mother’s Day Brunch menu. I haven’t decided completely yet. But they’re at the top of the list to consider, cuz I’m not really a morning person. I don’t want to be getting up at the buttcrack of dawn to get ready. Morning comes early enough as it is. No, I like to make things ahead of time and pop them in the oven when ready. It makes it LOOK like I got up at the buttcrack of dawn. I’m sneaky like that.
